Cornmeal Biscuit Dough (for Shrimp Potpie)
1 1/2 cups all-purpose flour
1/4 cup plus 2 T yellow cornmeal
2 t baking powder
3/4 t baking soda
3/4 t salt
1 1/2 T sugar6 t unsalted butter, chilled and cut into 1/2 inch pieces
3/4 c nonfat buttermilk, plus more for brushing dough
1. In a bowl whisk flour, cornmeal, baking powder, baking soda, salt, and sugar.
2. Using your fingers or a pastry cutter, cut butter into flour mixture. Using a wooden spoon, stir in buttermilk until dough holds together. Use Immediately.
