Chili Con Carne
1/4 cup cooking oil
2 lbs ground beef
2 (1-lb) cans red kidney beans, drained and rinsed
2 sliced large onions
1 chopped green pepper
2 minced garlic cloves
1 (1-lb) can tomatoes
1 can black olives
2 cans sliced mushrooms
8 oz can tomato sauce
1&1/2 tsp salt
3 Tbsp chili powder
1 crushed bay leaf
1/2 tsp crushed red pepper
3/4 tsp oregano
dash paprika
dash cayenne pepper
Saute onion, green pepper, and garlic in oil for 10 minutes. Add beef and brown. Add beans, tomatoes, mushrooms, olives, tomato sauce, and seasonings. Simmer covered for 1.5 hours. Add water if mixture becomes too dry.
Serves 4-6.
